Powder fort, powder forte, poudour fort, strong powder

Spice mixtures are very common in medieval cooking. Forme of Cury for example has lots of recipes that calls for powder douce or powder fort spice mixtures. I have already written my version of powder douce (sweet spice mixture) to the basic recipe section.  You will find lots of different versions of powder fort in internet and books. The medieval recipes doesn’t usually tell the exact measures of the spices used in spice mixtures or what kind of spices to use. One way to look for the perfect combination of these spice mixtures is to read the recipes and collect the most suitable spices from other recipes in the same source. If you don’t have access to some of the spices, that doesn’t matter!

Powder fort is a strong and warm spice mixture.

Powder fort

3 tablespoon of ginger ground

2 tablespoon of cinnamon ground

1,5 tablespoon of cloves ground

1 tablespoon of cubebs ground

1 tablespoon of grains of paradise ground

1 tablespoon of black pepper ground

Mix all together.

Keskiaikaisessa ruuanlaitossa ja resepteissä mausteseokset ovat hyvin yleisesti käytetty. Forme of Curyssä on esimerkiksi runsaasti reseptejä, joihin tulee laittaa powder douce tai powder fort mausteseoksia. Olen kirjoittanut jo aiemmin oman versioni powder douce reseptistä perusreseptiosioon (löytyy yläpalkista). Kirjoista ja internetistä on löydettävissä useita versioita powder fort mausteseoksesta. Keskiaikaisissa resepteissä harvoin kerrotaan mitä mausteseokset pitävät sisällään tai kuinka paljon mitäkin maustetta kuuluu seoksiin laittaa. Yksi tapa tutkia asiaa, on lukea saman lähteen muita reseptejä ja kerätä parhaimmalta vaikuttava kombinaatio mausteita seokseen. Ei haittaa, jos kaikkia mausteita ei ole saatavilla!

3 rkl inkivääriä jauhettuna

2 rkl kanelia jauhettuna

1,5 rkl neilikkaa jauhettuna

1 rkl cubeb pippuria jauhettuna

1 rkl meleguetta pippuria jauhettuna

1 rkl mustapippuria jauhettuna

Sekoita mausteet kaikki keskenään.
